1) Mix all ingredients except for olive oil. 2) Slowly add oil to emulsify
Spinach Salad
1 qt fresh spinach
1/2 cup crumbled applewood bacon
1/2 cup sliced mushrooms
1/4 cup diced tomatoes
1 tbsp feta cheese
2 oz. cabernet vinaigrette
1 small boneless skinless chicken breast
4 oz fried onion rings
5 cherry tomatoes
1) Toss spinach, bacon, mushrooms, diced tomatoes, feta, and vinaigrette. 2) Place in serving bowl. Top with chicken and onion rings. Finish by placing cherry tomatoes at 2,4,6,8,and 10 o’clock.
