Sauce: 1 cup chopped pecans 4 tbsp butter 1/4 cup brown sugar 4 oz. bourbon 1/2 cup whipped butter 4 tbsp chives
To Prepare Sauce: Toast 1 cup chopped pecans in dry skillet on medium heat for 3 -4 minutes. Add 4 tbsp clarified butter, 1/4 cup brown sugar, and stir until sugar combines with butter (2-3 minutes). Carefully (do not stand over skillet or you'll end up with a new hair-do!) add 4 oz. bourbon to pan and flame to burn off alcohol. Finish with 1/2 whipped butter and 4 tbsp chives off the heat. Allow butter to melt on its own. This will make the sauce thicken.
To Prepare Grouper: 4 - 8oz portions, dipped in buttermilk/egg wash, may be deep fried or pan sauteed in a mixture of clarified butter and olive oil.

Creamy Grits: 1 cup heavy whipping cream 2 cups wate 1.5 cups quick grits 3 tbsp cooking sherry 3 tbsp butter Kosher salt & fresh black pepper to taste
Cook at slow boil, stirring constantly until thick (about 7 minutes). Let stand and will thicken more.
