BURGUNDY MARINATED FLAT IRON STEAKS

Burgundy Marinated Steaks:
Ingredients
4 flat iron steaks
2 cups burgundy wine
1 ½ tbsp grey poupon Dijon mustard
1 tsp chopped garlic
1 tbsp black pepper
Procedure:
Combine all ingredients except the steaks in a mixing bowl. Place the
steaks into a medium sized bowl, and pour the marinade over the steaks.
Place a top on the bowl, and refrigerate for four hours. For a stronger
wine flavored steak, marinade overnight. After the steaks marinade, grill
your steaks until the desired doneness. Remove from grill and let stand for
3 minutes, and then slice against the grain at ¼ inch slices.
Soy-Balsamic Reduction:
Ingredients
1 cups balsamic vinegar
½ cup soy sauce
½ cup sugar
Procedure:
In a saucepan over medium heat, simmer vinegar and soy sauce until reduced
to 1 1/2 cups. Add sugar and simmer five minutes. Let stand at room
temperature until cool.
Beer Battered Onion Rings:
Ingredients
1 bottle Budweiser beer or any domestic
2 eggs
1 tbsp old bay Cajun seasoning
4 cups flour
1 tsp granulated garlic
1 tsp black pepper
1 tsp onion salt
1 tsp seasoning salt
1 Vidalia onion
Procedure
In a medium bowl combine flour, garlic, black pepper, onion salt, and
seasoning salt. Set aside. In a small bowl, combine the beer, eggs, and
old bay. Whip until blended thoroughly. Slice the onion into very thin
onion rings, and place in the beer mixture. Coat the onions, and then toss
in the flour mixture. Coat well. Drop the battered onions into a fryer and
fry until crispy.
Smoked Cheddar Mash Potatoes:
Make you favorite mashed potato recipe, and add grated smoked cheddar cheese
for a wonderful variation to this classic.
Plate Setup Procedure:
Place a scoop of the smoked cheddar mash potatoes in the center of your
plate. Fan the flat iron steak slices across the mash potatoes. Top with
the fried beer battered onion rings, and drizzle with the balsamic soy
reduction. Serve with your favorite garden fresh vegetable.
